FDSC 3040 - Evaluation of Dairy Products

Emphasizes sensory evaluation of dairy products. Discusses basic principles of organoleptic evaluation, fundamental rules for scoring and grading dairy products; evaluation of all classes of dairy products based on established grades and score cards.
